On Sunday the 5th May we celebrated Cinco de Mayo (Spanish for Fifth of May), a special occasion on the calendars of those from the United States and Mexico. Back in the day it was a day all about celebrating their freedom and democracy in the first years after the American Civil War.
Today Cinco de Mayo is a celebration of Mexican heritage, and when Discovery invited us to take part in the celebrations and cook up our own Mexican banquet, I was very quick to say ‘Yes please!’.
Being a big fan of fajitas and rightly indulging in them on a regular basis, I was more than happy to share our fajita night with you all!
Discovery very kindly sent out a selection of their range for us to cook up a Mexican storm in the kitchen, they even sent along their new Garlic & Herb Soured Cream to taste test.
What I really love about cooking up fajitas beside the fact that they are a real treat, is that they are so easy to cook up. I follow the instructions on the box as it is such a simple and tasty meal without me dabbling in the unknown. Picking up the Discovery Fajita Kits are a fool proof way to enjoy them, you can add whatever you want to make the perfect fajita.
I drizzle oil in a pan and heat it up ready to add the chicken that has been very generously covered in the fajita coating, the hotter the pan the better. I throw in the chicken and let it sizzle away as it gives off the most amazing smells that make my hungry tummy flip as I know dinner is well on the way.
I continue tossing the chicken around the pan so that it is all nicely browned before I add in the onions, I cook the onions and the chicken together before finally adding the finishing touch, the peppers. The cooking instructions on the back of the box say to add the onions and peppers at the same time, but I like my onions soft and my peppers crunchy.
With the sizzling fajitas cooked up and ready to be devoured, we sit down. To accompany our Mexican feast we cooked up some chips (American right!?) and even added some Mozzarella (Italian!) Call me odd but I absolutely love adding all of this into my chicken fajita wrap. The Mozzarella melts and is just incredibly tasty, especially when combined with the new Garlic and Herb Soured Cream.
The soured cream is really tasty, and makes a great accompaniment to a fajita meal, it goes really nicely with the salsa that comes along in the fajita kit.
Cinco de Mayo was a lovely evening in our household, we may not have partied hard but we did enjoy great food and a glass or two of wine.
